Time to start. Cinnamon Crumble Cake


Today I have been procrastinating (again) by having a look at some amazing blogs about cooks and their wonderful adventures in the kitchen. I always get so happy and excited to see how other people are as in love with food as I am, how excited they are about things that smell nice, tiny ingredients that make a whole pot taste incredibly different, how some tastes and smells go so well together. It makes me very happy to know that I am not the only crazy chick getting too excited about some food.

Noun:
Any nutritious substance that people or animals eat or drink, or that plants absorb, in order to maintain life and growth.

But it is so much more than that!! It's love, it's passion, it's a discovery, it's a trigger for each and every sense of your body, it's sharing, it's socialising, it's enjoying your quality 'self' time, it's a celebration, it's memories, it's family, it's friends... To me - it's happiness.
Whenever I look particularly nice, say 'I love you' in a fancy way or cook up something nice, my lovely boyfriend Hugo says 'Miss(ssssssssssss) Nak!' which is always the nicest thing to hear and the loveliest sign of approval. Hence the name of the blog: I feel that if there is something good it might as well be shared. And food is always something good.
That leads me on to this cake - it was Hugo's birthday a few days ago and I baked 2 cakes (yes - 2. I love him just slightly over the top and I couldn't decide which one to choose). One of them was really lovely and today he evaluated it as 'top quality'. So I assume that puts it in the category of 'something good', therefore I shall share it with you!

Cinnamon Crumble Cake
Crumble:
2 tbsp unsalted butter (room temp.)
3 tbsp flour
1/3 cup golden caster sugar
3/4 cup crumbled walnuts (you can toast them a bit in advance)
1 1/2 tsp cinnamon.
Cake:
2 1/2 cup plain flour
2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
185g unsalted butter (room temp.)
1 cup sugar
4 eggs
1 tsp vanilla essence
375g (1 1/2 cup) sour cream
Mix the crumble ingredients until it all walnuts are well covered. For the cake, mix the butter and sugar unti smooth, gradually beat in the eggs, mix well and add vanilla. In a separate bowl mix the flour, baking powder and baking soda and gradually add the flour mixture into the egg mixture. Mix well and and add the sour cream.
Pour half of the mixture into a buttered cake tin, scatter about a third of the crumble on top, carefully pour the rest of the cake mixture and cover it with the remaining crumble. Bake in 180C oven for about 45 degrees or until golden brown.
