Cheap Low-fat Vegetarian Lasagna

 

1. An unexpected dinner party fell upon us recently. 
2. The budget was exceptionally tight due to recent events (me falling asleep in the airport in Istambul and missing my flight, how charming).
3. Fancy, quick and impressive dinner on a low budget?

Lasagna!!!!


This makes enough for 6 people:
Ingredients:
a pack of lasagna pasta sheets
2 cans of chopped tomatoes
2 tbsp olive oil
3 garlic bulbs
1 tsp smoked paprika
400g spinach
500g tub of cottage cheese
1 sweet potato
a handful of fresh parsley
4 tbsp single cream
salt
pepper
1.5 balls of mozzarella cheese

Preheat the oven to 180C.

Gently simmer the garlic in the olive oil in a large pan, until fragrant. Pour in the tomatoes, sprinkle in the paprika, allow to cook for about 8-10 minutes and season with salt and pepper.

Peel and cut up your sweet potato into small cubes and boil. Ove the same pot (save time and space) steam the spinach until softens and chop it up. Add in the cottage cheese, cream and parsley, boiled sweet potato, season with salt and pepper.



Make sure both of your sauces are quite moist so that the pasta could cook in them.

Layer the lasagna starting with the tomato sauce on the bottom, pasta sheets, spinach sauce pasta sheets, tomato sauce, pasta sheets, spinach sauce, pasta sheets.... It makes a really nice and firm lasagna that keeps its shape. Finish with the spinach sauce on top and bake for about 30 mins. Then cover the top with sliced mozzarella and bake under the grill for about 5-8 more minutes.

  1. It is! There is no white sauce, the tomato sauce is really light and the spinach sauce is healthy and full of lovely protein. No guilt!
