Yoghurt and Cinnamon Pancakes



My favourite food is pancakes, without doubt. Big pancakes, small pancakes, sweet ones, savoury ones, flat ones, puffy ones... YUMmmmmmmmmm.

When I was younger, my mum would make a box (!!) of crepes filled with sweet curd (lithuanian cottage cheese) and vanilla, and every day I would gently pan-fry 2 of them for lunch and have them with sour cream and jam. I did this for years! It never got boring. And whenever I would go to my grandmothers' houses, the only thing i would ask for was pancakes. I remember one of the most fascinating meals from my childhood - my great grandfather used to make extremely puffy pancakes with baking soda and raisins. They were so puffy I could hardly fit them in my tiny mouth! 



And today I shall share a recipe of really light and amazingly tender pancakes with yoghurt and a little bit of cinnamon. 


The recipe serves 2 people for breakfast (or me alone, any time of the day. And I'd probably want some more!!). Basically, it makes 2 full pans of pancakes.

Ingredients:
2 eggs
6 tbsp yoghurt 
pinch of salt
1 tbsp sugar
3/4 cups flour
about 1/2 tsp cinnamon (you can add more if you want them to be more cinnamon'y)
2 tbsp oil

Beat the eggs, add the yoghurt, mix in the salt and sugar, slowly mix in the flour and oil. Finally add the cinnamon, and mix well. Make sure the non-stick frying pan you're using is very clean, otherwise they might stick. I made my ones small and cute, using 1 tbsp of batter for one pancake, but the design it's up to you. Fry them on a really low heat for about 3-5 minutes each side and serve with whatever you prefer your pancakes.

I stayed loyal to yoghurt and cinnamon and opened some grandma's apple jam later on. Ooooh they are so good! Enjoy!!

    Pancakes look absolutely delicious! Would you please share the recipe for that sauce drizzled on the pancakes? Is that sour cream, you said?

  3. Hi Pavani! I hope you're well? The sauce is just some natural yoghurt with some cinnamon on top :] But I really like mixing natural yoghurt with fruits, berries or home-made jam to make your own flavoured yoghurt, you could also try adding some honey, vanilla and perhaps some finely grated orange zest? I love experimenting in this area :]

    I am doing well, thank you, although I miss my cappuccinos at Fork Deli :) I miss reading my books while sipping on the cappuccinos, and I miss London! Hope you are doing well too. Exams finished?

  5. Hmmm... I made this today for a crowd, so I quadrupled the recipe. 8 eggs, 1 and a half cup of home made yoghurt, 4 tbsp sugar, 3 cups flour, 1/2 cup oil (sunflower), 2 tsp cinnamon. Mine did not turn out so fluffy. They were tasty, but dense. Any suggestions what I did wrong? We tried the yoghurt sauce with orange zest, raw honey, and vanilla. That was wonderful! Added fresh berries for breakfast.
