Student food: Healthy fried chicken and crispy chips


I am about to finish Uni.

Oh my goodness.

I definitely do not feel ready! I think the most difficult thing to say goodbye to is the times when you wake up for a lecture and think 'do I want to go?..' and you DO have the choice to say no! When is the next time in life you will be able to do that?? (Hi mum, just to let you know I always do say yes. It's just nice to have the choice!)


One thing I did not pick up as being a student is the student food. Everyone has their thing they have an obsession with and cannot sacrifice - whether that's make up, clothes, shoes, bags, accessories, cars, booze... Mine is food. And every meal to me has to be something that makes me happy, proud and feel nice. 

Although there is one thing that I do sometimes make from the student kitchen. Fried chicken nuggets with chips. 

Haha got you there! Obviously, I cheat and make a super healthy version!!


Ingredients:
chicken (however much you need)
plain flour
egg (beaten)
breadcrumbs
mustard seeds

for the chips:
potatoes
salt and pepper
olive oil 

Heat up the oven to 180C. Cut up the potatoes into chips and soak them in boiling hot water for 10 minutes. Put them on some baking paper on a baking sheet, drizzle with olive oil, season with salt and pepper and mix well until all the chips are covered. Cover the chips with tin foil and stick them in the oven. Keep the tin foil on for the first 10 minutes and once off, bake for another 30 minutes, or until nicely browned. This is how you make them crispyyyyyy.

Now the chicken - prepare 2 little plates and 1 little bowl. Put flour on one plate, the egg in the bowl and breadcrumbs with a little of mustard seeds in the other plate. Cut the chicken up into nuggets and make the crust: first cover them in flour (it helps the egg to stick), then in egg (it helps the breadcrumbs to stick) and then in the breadcrumbs mixture. It is a fiddly process, but it's all worth in the end.

Lay the nuggets out on some tin foil and bake in the same oven for about 20 minutes or until nice and crisp. 

Voila!

You can serve it like a proper student - with some ketchup, or like me - with a salad :]

  2. I have no doubts you ALWAYS said YES to your lectures!:))) This way of crispy chicken sounds great! I have to make it too (not for students, though:)). God luck in the rest of the exams!
